
While on the German island of Sylt, we enjoyed this fantastic white wine with newly interpreted Napolitan pizzas at the laid back Marinara Beach Club.
Straw yellow color with slight cloudiness. That’s because the still fairly young Rings winery bottles this Burgundy blend of Chardonnay and Pinot Blanc unfiltered. Fermented in wooden barrels with only natural yeasts, the wine remains on its lees for a full 16 months until it is truly bone dry.
The nose is smoky and yeasty with hints of lemon zest. This wine is obviously not about fruit, but the origin and the soil. In the mouth a creamy melt, beautiful, with notes of lemongrass and a little peach. But as I said, the fruit here is rather austere. The long finish is marked by a smoky saltiness. Very good.
Drink through 2025.
