Tasting note

Pale lemon-yellow with a greenish tinge. Hazy, unfiltered. The nose takes a little time to open, revealing green apple, lemon and grape must. Medium in intensity, with herbal and vegetal notes of fennel and hay. Yeasty bread-dough tones and a mineral touch of wet stone and moss drift above it all. Attractive, if a little rough-edged — deliberately so, one suspects. On the palate, a faint tannic grip accompanies a medium-plus body. Alcohol and acidity are both medium. Flavours of apple, grape and lime come through, more primary than on the nose, with an interesting touch of Dijon mustard. Pleasant to drink, though not overly deep. Musty on the finish, reminiscent of cider, with salted lemon. A very good natural wine, not in the "orange" spectrum, and welcoming for those just venturing into natural wines. Kept improving over two days.
